Bone-in unprocessed fresh or chilled pork hams are used for retail sale as fresh pork, further processing into dry-cured or smoked hams, and foodservice applications. The bone-in format is preferred for certain curing processes, such as prosciutto and country ham production, where the bone contributes to flavor development.

Fresh and chilled pork hams have a limited shelf life, typically 21–45 days from slaughter depending on packaging method (e.g., vacuum-packed). This constrains viable trade lanes to shorter transit routes or air freight for distant markets. Importers must coordinate closely with logistics providers to ensure product arrives within USDA FSIS-acceptable temperature and shelf-life parameters.
